The headers on my Seven are a set of custom 4 to 1 and are just starting to produce some fine rust. I'm told when they were built some years back they were mighty expensive, not wanting to replace them anytime soon I thought I'd get them coated.
Question is do I go for a regular powder coat or the ceramic coating?

I think the ceramic would hold up better under the high heat. If it were my choice I would pick ceramic.

Route 66 actually sells some paint that is great. It comes in black, silver, or steel grey. All you do is scuff up your headers etc... with a wire brush and dab, spray, or brush on the paint. It takes a little while to dry to the touch, but it really protects your cast iron (and steele). It looks good too! Very easy to deal with and affordable.

I have used VHT, the Eastwood stainless paint and even chrome on tubular exhaust manifolds (headers) but none of these processes hold up as well as the Jet Hot Ceramic coating IMO.
I had a exhaust manifold and silencer done on a Seven by Jet Hot about eight years ago and it still looks great.
I still have to use white or black VHT on some racecars as its period correct and the Jet Hot adds too much thickness to the pipe diameter , making it impossible to slide the sections together without grinding out the excess with a flap wheel (time consuming), for some reason the new paint formulation that VHT now use isnt very durable and you are lucky to get a season out of a set that have been painted with it.

I agree on the VHT I spent ages preparing to their instructions and followed the heat cycles to the letter and as you say by seasons end it looked like crap.
I wanted white but 2 local guys have stopped supplying due to the hi maintenance of keeping it white so I might go the satin silver.

The other half got his custom made headers silver ceramic coated, time will tell how it holds up but meant to be the way to go.
